Our Nephew's Visit   甥っ子のホリデー☆







Our nephew (my husband's brother's son) and his girlfriend are here on holiday. They arrived this evening from England and will stay with us for a few days before going to Malaysia. We have a chance to see our nephew maybe not every year but once in one or two years, but this is my first time to see his girlfriend (my husband met her in England somtime ago). It's going to be nice to spend some time together.

His girlfriend is a vegetarian (and cannot eat mushrooms) so it's going to be a challenge for me to cook dinners. The trouble with vegetarian meals is that it's extremely difficult to make something interesting. Hope I can come up with enough ideas. Although I think I use quite a lot of vegetables, I do often use chicken stock or a little bacon or a little parma ham here and there for us. Without any meat at all, it tend to be a little too monotonous. It's even harder to prepare something that looks a little special with only vegetables.

Today, I just made carrot soup (with curry flavour) and a salad (quinoa, cucumber,green onion, avocado, mango, coriander leaves, mint leaves, salad leaves and almond). I also cooked some chicken breast for the rest of us. No idea what to make tomorrow.
